Fabulous Fudgy Sweet Potato Chocolate Brownies!



It may sound outlandish but sweet potato is the ultimate addition to your brownie batter! This recipe makes use of the nutritious root veg in a weird and wonderful way. The starchy and sweet-tasting potato is rich in Vitamin A, B12, manganese and dietary fibre. With only a handful of simple ingredients, these moist and fudgy delights are as easy to make as they are delicious. These brownies are also suitable for anyone who is looking to sweeten up their Paleo diet. Now, get baking!

Ingredients:
3 eggs
¼ cup maple syrup or organic honey, or more to taste
½ cup melted coconut oil + extra for greasing
¾ cup almond meal
1/3 cup cocoa powder
1 t baking powder
1 cup cooked sweet potato
chocolate chips for topping

Method:
1. Preheat the oven to 350°F. Grease baking pan with coconut oil.
2. Whisk together the eggs, syrup (or honey), and coconut oil until well combined. In a separate bowl, combine almond meal, cocoa powder and baking powder.
3. Whisk the dry ingredients into the wet. Whisk in the sweet potato.
4. Sprinkle the batter with sea salt for an added kick! Pour brownie batter into baking pan and bake for 30 minutes, or until an inserted toothpick comes out clean. If using chocolate chips, lightly press them on the brownie shortly after it comes out of the oven.
