Easy and Decadent Chocolate Superfood Bars



These easy-to-make superfood bars bridge the gap between indulgence and healthy eating. Each delicious bite is packed full of wholesome and nutritious ingredients. The recipe makes use of superfood delights like pumpkin seeds, chia, flaxseed, cacao, goji berries and antioxidant-rich dark chocolate. The recipe is gluten and dairy-free and sans any added sugar. These yummy bars will last a while in the fridge, so you can make them ahead of time and pop one in your daily lunch to snack on in between meals.

Ingredients:
1½ cup pitted medjool dates, pitted
1 cup almonds, pecans, or walnuts
½ cup coconut flakes
½ cup raw pumpkin seeds
¼ cup goji berries or dried cranberries
¼ cup ground flaxseed
¼ cup unsweetened cocoa powder
2 tablespoons (chia seeds
1–2 tablespoons water, just enough for mixture to hold together
½ cup chopped dairy-free dark chocolate, melted
Add any of your favorite superfoods for sprinkling on top of the bars. We suggest cacao nibs, hemp seeds, goji berries, pumpkin seeds, coconut, chia seeds or chopped nuts.

Method:
1. Place dates and nuts into food processor and blend until finely ground.
2. Add coconut, pumpkin seeds, goji berries, flaxseed, cacao powder, and chia seeds, pulsing until well blended. If needed, add water a tablespoon at a time, the mixture should hold together when pressed between two fingers.
3. Place the mixture into a parchment lined 8×8 square pan and press evenly into the pan with your hands.
4. Melt chocolate and spread evenly across the top of the bars. Sprinkle extra seeds, berries, or nuts across the melted chocolate, cover, and chill until set (at least several hours) before cutting. Makes about 16 squares.
