Bountiful Banana Bread: Vegan



Sometimes you purchase bananas and you watch them get a little bit more bruised each day and you know you should be using them but keep forgetting. The best part about mushy bananas is that they are exactly what is needed to make banana bread. So, take those old bananas and turn them into a nice load of banana bread to have for breakfast with your tea or coffee. Here’s what you will need.

Bountiful Banana Bread: Vegan

Ingredients:
¼ Cup of Unsweetened Vanilla Almond Milk
1 Teaspoon of Apple Cider Vinegar
1 ½ Cups of Overripe Bananas
½ Cup of Cane Sugar OR ⅓ Cup of Maple Syrup
¼ Cup of Avocado Oil OR Coconut Oil
1 Teaspoon of Vanilla Extract
1 Cups of Whole Wheat Pastry Flour
1 Teaspoon of Baking Soda
½ Teaspoon of Fine Sea Salt
½ Teaspoon of Cinnamon
½ Cup of Chocolate Chips
Method:
First up, you need to heat your oven to 350 degrees Fahrenheit and grab your loaf baking pan. You will want to grease this with margarine or another substitute to avoid any sticking when the banana bread is removed.

Second, you need to mix the wet ingredients together in a small mixing bowl. Combine the almond milk and apple cider vinegar. Now grab a large mixing bowl and put the mushy bananas inside. You will need to mash them and you can use a fork or potato masher to achieve this result. Now, add the sugar, oil, and vanilla to the bananas and mix it all together followed by the bowl of almond milk mixed with vinegar.
Third, it is time to add the dry ingredients. Pour in the flour, baking soda, salt, and cinnamon. You do not want to over mix the ingredients at this point as it will make your banana bread quite tough and not moist the way you want it to be. Mix it together until everything is just combined, some chunks of banana are okay as they will be delicious in the finished product. Now you can fold in the chocolate chips as the final step in the batter process.

Lastly, take the pre-greased loaf pan and pour the batter inside. In terms of baking time, it will need to bake for around an hour and ten minutes to an hour and twenty minutes. In order to gauge if it is finished simply slide a toothpick or knife into the center of the loaf. If it comes out clean or without any batter, then it is ready to be removed from the oven. Let it cool, and then slice it up for a delicious snack.
